Spring reaches its peak in our estate. As a consequence, the olive grove is transformed, leaving behind the sober green of winter to dress in a whitish and subtle mantle. It is the time of flowering, an ephemeral event that undoubtedly marks the destiny of our next harvest.
Walking through the farm today is a different sensory experience. The air carries a faint aroma, a mixture of fresh grass and pollen that announces the awakening of the tree.
Our four varieties receive this change with their own times. Picual shows its strength, while Arbequina and Hojiblanca seem to compete in delicacy.
Special mention should be made of the Pajarera, our most unique variety, whose flowers seem to integrate perfectly into the ecosystem that gives its name to our house.
What we see today as small white clusters, popularly known as “trama”, is the beginning of it all. It is a process of astonishing fragility.
Each small flower has a mission: to transform itself into a healthy and full of life olive. However, only a small fraction of these flowers will ever become fruit.
Fruit set depends on the perfect balance between humidity, wind and temperature. At Coto Bajo, we observe this cycle with the respect that what is born naturally deserves.
In our organic farming model, flowering is not an isolated event. It is the moment when the farm’s biodiversity plays its most important role.
We do not use chemicals that alter the cycle. We allow pollinating insects and auxiliary fauna to coexist with our olive trees in a healthy ecosystem.
Taking care of the soil and canopy ensures that the olive tree has the nutrients it needs to feed those flowers. The quality of our oil begins long before milling.
