This absolute control allows us to craft two exceptional lines of EVOO: certified Organic and sustainable Integrated Production.

Both cultivation and production systems are governed by strict controls on permitted phytosanitary products, with differences in their chemical composition. Herbicides and pesticides are strictly and completely prohibited in organic farming. At Coto Bajo, we do not apply herbicides or pesticides in any of our lines; therefore, the real difference between our Organic and Integrated Production oils lies in the soil management, the composition of the olive varieties, and the harvest timing. Our organic oils feature a distinct green-fruity tasting profile, generally with a characteristic, sharper peppery finish.

Regardless of the product line, all our EVOO is crafted using cold extraction. Furthermore, we process the olives in record time—just a few hours after harvesting—to prevent oxidation and fully preserve their natural qualities. As a result, we manage to maintain exceptionally low acidity levels and an intense aromatic profile.

We specifically use dark glass for our 250ml and 500ml bottles because light is the ultimate enemy of olive oil. We take great care in packaging your order, but if it arrives damaged (damaged boxes, leaking bottles, or missing items), please note it on the driver's delivery receipt. Conservation and use in the kitchen

Because these are family-sized formats, we highly recommend decanting a portion of the oil into a dark glass dispenser for your daily kitchen use. Keep the main container tightly sealed and stored in a cool, dark place. This simple step prevents continuous contact with air from oxidizing the oil, flawlessly preserving its health properties and flavor profile for up to 18–24 months.

Cooking with Extra Virgin olive oil is a safe, stable, and highly recommended option because it nutritionally complements the dish you are preparing. Its smoke point is usually around 160°C (320°F). Our oils are ideal for raw consumption as a dressing, as well as for sautéing and quick frying (try making fried eggs or pan-seared dishes with our oil).
